• 1 block extra firm tofu
• around 1 cup (or enough to cover & marinate) vegetable broth
• 1/3 cup unsweetened non-dairy milk + 1 tbsp flour
• 1 packet of vegan friendly coating mix
• topped with vegan gravy

ROASTED VEGGIES (didn’t measure)
• baby carrots
• brussels sprouts
• extra virgin olive oil
• thyme
• garlic salt to taste
• pumpkin seeds
450 degrees in air fryer for about 20 minutes (or regular oven for 30-35 minutes)

PUMPKIN BISCUITS RECIPE –

DARK CHOCOLATE BROWNIE WITH PECANS
• 1 box brownie mix
• 1/3 cup unsweetened apple sauce (replaces 1-2 eggs)
• 1/2 cup melted vegan butter
• chopped pecans optional
