Mexican here: great recipe! But “elotes preparados o esquites” (prepared corn or esquites) are as basic as you could think: mayo, cheese, “salsa botanera”. Just look for a Mexican snack salsa but be warn we love spicy and acid which is basically the sume of our candies and snacks xD
