VEGAN CHOCOLATE MUG CAKE!!! This recipe is delicious (well it’s chocolate cake!) and it only takes a few minutes to make! As well, it’s vegan, whole grain, refined sugar free, and if you want you can make it wheat free, oil free, or gluten free! This vegan chocolate mug cake is a perfect snack for after school or work. This recipe was inspired by this video by Liv’s Healthy Life:

VEGAN CHOCOLATE MUG CAKE

Ingredients:
4 TBSP flour (I used spelt, you can use whole wheat, kamut, or experiment with gluten free flours)
2 TBSP coconut sugar
1 TBSP unsweetened cocoa powder
1/4 tsp baking powder
2 tsp maple syrup
1 tsp melted coconut oil (can also use other oils such as olive or you can use applesauce instead)
4 TBSP almond milk (or other non-dairy milk)

Mix dry ingredients in a microwave safe mug. Then mix the wet ingredients together in the mug with the dry ingredients. Microwave for 1 minute and 30 seconds. (1 minute will yield a more fudge like cake and 1 minute 45 seconds will yield a more firm cake).
