Definitely core the tomato, but wait for summer when tomatoes are actually in season. You can’t get truly ripe, flavorful tomatoes any other time of year, unless you live in a warm climate (I don’t think Canada qualifies.
) Oh, and I just watched the ‘Strictly Dumpling’ video, he didn’t core it, but he used a tomato that has a smaller core (like the ones that are sold on the vine), his tomato was definitely riper, and the recipe calls for 2 tsps of salt, not 1. Maybe those things will help? Huh… on his second batch, he said 1 tsp of salt. Don’t know which is correct! 
Just use salsa. Even easier.

HOT TIP: Put store bought tomatos in your window sill for 2-4 days……it ripens the tomato and tastes sweeter and more like a fresh garden picked tomato! YUM……YUM……YUM

I make with a tomato per every cup of rice, so it’s more tomatoey! I also add a little Italian seasoning. And definitely core the tomato! I went through a phase where I was making this a couple times a week after I saw his video!
