We are now halfway through January, which means you are either getting stronger in your New Years resolution or just hanging on with a thread. It doesn’t matter which one you might associate more with currently, I am here to help keep your resolution promises going! Weight loss is by far one of the most popular New Year’s resolutions and one of the most popularized ways to lose the weight is by adopting a vegan diet. As most of you know, I can attest to the wonders of a whole food, plant based vegan diet, now that I am 100 pounds lighter. One of the best ways that I can recommend to accelerate the weight loss is by upping your leafy greens intake, and my favorite way is to do this is by eating salads. I especially love salads with great oil free dressing ideas to ensure that it stays low fat. Today’s pizza salad recipe can be made with just a few simple base ingredients and you can also jazz it up with various toppings of your choice. The key is to keep it simple and tasty and if you can do that, you are well on your way to sticking with your resolutions!

-2 cups washed & rinsed chopped romaine
-1/4 cup marinara or pizza sauce ()
-1/4 cup banana pepper rings
-1/4 tsp Italian seasoning
-Large bowl
