How to Make Vegan/Gluten Free Elvis Cake (Peanut Butter, Banana, Bacon) – Dolled Up Desserts

The King of Rock and Roll had an interesting culinary palate, which is the inspiration behind these vegan, dairy free, egg free, gluten free cake bars! Elvis Cake is the perfect combination of the Dolled Up Desserts signature Banana Bread, topped with THE BEST vegan peanut butter frosting and smokey coconut bacon.

This recipe is super simple and I would say one of the TOP THREE recipes in our roster (thus far). So what are you waiting for- throw on Jailhouse Rock and get baking.

INGREDIENTS

a) Coconut Bacon
***this fabulous recipe is inspired by The Minimalist Baker. Check out the original recipe here:
– 2 cups flaked unsweetened coconut;
– 1 tbsp grapeseed/canola/sunflower oil;
– 2 tbsp tamari/gluten free soy sauce;
– 1 tsp paprika;
– 1 tbsp maple syrup;
– 1/2 tsp liquid smoke (this is essential);
– pinch of salt and pepper;

b) Vegan Gluten Free Banana Cake
– One Dolled Up Desserts Lady Banane Muffin Mix (buy it here and have it shipped right to you:
– 1/2 cup sunflower/canola/grapeseed oil;
– 1/4 cup maple syrup;
– 4 previously frozen super ripe bananas;
– 1 tbsp apple cider vinegar;
– 5 tbsp water for flax egg;

c) The BEST Vegan Peanut Butter Frosting
– 1/4 cup non-dairy butter (Earth Balance);
– 1/2 cup non-dairy cream cheese (Tofutti, if you cant get this use more butter);
– 1/2 cup smooth peanut butter;
– 3 cups icing sugar;
