I always make it with GF oat flour. But since oat flour is very heavy, I
recommend you sub about 1/4 to 1/3 of the 1 cup used in this recipe for a
lighter flour, e.g. a gluten-free flour mix(1/3) or cornstarch(1/4).
Otherwise, they won’t rise as much and will stick to your teeth when you
eat them
