VEGAN Lentil Patties/Cakes

Ingredients:

1 c lentils
1 chopped medium onion
1 chopped red bell pepper
1/2 c unbleached flour
4 tbsp nutritional yeast flakes
2 tsp smoked paprika
mixed dry herbs
1/2 tsp red chili pepper flakes
1 organic egg
chopped parsley
sea salt/black pepper (to taste)
olive oil

How-To:

Measure out 1 cup of lentils and run your fingers through them to make sure there are no debris. Run and rinse under cold water. Add to a sauce pan and cover with cold water. Bring to a boil for 3-4 minutes then reduce heat and cook down for 15 minutes. Once lentils are cook put in a separate bowl. Mash cook lentils with potato masher. Add all the ingredients. With clean hands mix together until everything is combined thoroughly. Form into patties. Refrigerate for 1 hour before cooking. Heat a non-stick pan with olive oil. Brown on both sides for 3-4 minutes until golden brown. Serve while HOT! EAT AND ENJOY!
