Hey guys, How is your Sunday so far ? If you feel like cooking something delicious for your tummy today, try this amazingly delicious vegan carrot cake. It has a lot of ingredients but it’s super easy to make and most of all super delicious. Let me know if you would like to see more cooking videos. And what is your favorite cake ? CARROT CAKE INGREDIENTS:

1 1/3 cup unsweetened soy milk
2 tsp apple cider vinegar
1 tbsp ground flax (or ground chia) or egg replacer
3 tbsp water
1 1/2 cup spelt flour
1 cup coconut flour
1 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1 tsp ground ginger
1/2 tsp ground all-spice
1/2 tsp sea salt
1/3 cup coconut oil (solid but soft at room temperature)
1 cup packed brown sugar
2 tsp vanilla extract
2 cup grated carrot

FROSTING INGREDIENTS:

1/2 cup coconut oil (solid but soft at room temperature)
1 tbsp lemon juice
2 tsp vanilla extract
1/2 tsp apple cider vinegar
2 cup powdered sugar
1 tbsp + 1 tsp unsweetened soy milk

ALL SPICE RECIPE :

1/2 tsp ground cinnamon
1/2 tsp ground cloves
1/2 tsp nutmeg

Mix all together – and there you have it !

Great vid @ Lucy 😉 Cake looks amazing, I’m not actually a Vegan though I haven’t ate meat for a long time so I guess I’m a Vegetarian 😛 😀 If you can get Korn products where you live you should try them, there’s Korn chicken, Korn Burgers, Korn Mince, even Spicy Korn meat, I guess Vegan’s can eat them, its all veggie? Anyway, tastes like proper meat to me, never looked back, in fact I’d say the Chicken burgers taste much more nicer than real ones and the mince too… only thing they haven’t made is Korn Steak, but I don’t miss that, I should make a video of it one day lol. Anyways, keep up the good work. Thumbs 😉
