Claire Cookies! Vik’s Vegan Oat & Dried Fruit Cookies

Hey! So Vik bought a new camera and one of the justifications was that it’ll help improve my YouTube video quality. So here’s a recipe video. It’s for my Claire Cookies, named for the dear sweetheart who inspired them. They’re vegan oat and dried fruit cookies, and the version in this video is my preferred one, with orange zest and candied orange peel. But y’all feel free to customise to your own liking. Also, I ramble a lot, and am highly lazy, so no YouTube magic here. What y’all see is what y’all get.

Anyways, here’s the recipe if anyone wants to try making these cookies! Btw, they’re the crisp type, not the chewy kind.

Claire Cookies (makes ~60 cookies)
160g Caster Sugar
120g Brown Sugar
225g Butter (or butter substitute. I suggest using vegetable shortening instead of nut butters for the best textural results)

2 Eggs (or egg substitute: 4 tbsp flour + 1 tsp oil + 1 tsp baking powder + 4 tbsp liquid (I used soy milk diluted with orange-infused water))

190g Flour (I used self-raising flour, but plain flour is also fine)
1 tsp Baking Soda

240g Oats
100g Dried Fruits (I used Candied Orange Peel)
80g Chocolate Chips (I used a mixture of dark and milk chocolate)
1 tsp flavouring (I used orange zest but vanilla is fine too)

1 – Pre-heat oven to 180 degrees Celsius
2 – Cream the butter substitute and sugars together in a large bowl
3 – Mix all the ingredients for the egg substitute, and the additional flavouring) in a small bowl and add to the creamed mixture from Step 2 asap (while the mixture is still aerated and buoyant) and fold to combine
4 – Add the flour and baking soda to the mixture from Step 3 and fold until just combined
5 – Add in add-ins (oats, dried fruit and chocolate) and fold until mixture is homogenous
6 – Scoop out cookie dough balls onto a baking sheet before flattening with a fork
7 – Bake in pre-heated oven for 15 minutes
8 – Cool and enjoy
