In Episode 8 of Candice’s What I Eat in a Day series she chronicles her day recipe by recipe showcasing amazing Vegan food that is budget friendly and easy to make.

Candice starts off her day at 11:35 AM, which is somewhere between the time most of you are eating lunch and breakfast. Since she got off to a bit of a late start and has quite a few things to take of today she had already done her makeup and was starving. She opted to whip up a quick smoothie bowl due to the speed it could be made in and the nutritional value that could be added by putting in additional healthy ingredients. Combine almond milk, greens, matcha, mango, and ginger into your blender and mix well. It’s going to turn a nice lime green color when you’ve reached the right consistency. She gets out two bowls, one for her and one for James. She pours an equal amount into each one and then begins topping them each with lines of various healthy ingredients. These include: chia seeds, maple granola, sliced bananas, blueberries, dried apples mixed with strawberry powder, and finally a super food trail mix full of almonds, goji berries, coconut and cacao nibs. She finally tops it all off with vegan chocolate chips.

At 1:35 PM it’s time for lunch. After a recent shoot Candice ended up with a surplus of Naan bread, which she figured she’d make Manakish out of. For those of you that don’t know Manakish is a popular Middle Eastern food consisting of dough topped with zataar, cheese, and sometimes ground meat. After searching her fridge Candice finds come vegan mozzarella cheese and some minced garlic. She lays two pieces of Naan bread out on a flat baking pan and puts some olive oil on them, then spreads out a thin layer of minced garlic, loads them both up with zataar, adds a bit more oil and finally tops them with the vegan mozzarella. She puts those into the oven and brings her focus onto making a German style cucumber salad. She combines apple cider vinegar, maple syrup, salt, dill, parsley, and just a bit of basil into a bowl. She then whisks this all together, salts her cucumbers and pours the mixture over them getting them all evenly coated. She pulls out her Manakish which is now nicely baked and sits down to enjoy a tasty lunch with James.

It’s now 7:15 PM and time for dinner. After a further review of her supplies on hand Candice decides dinner is going to be Chinese Fried Rice. She cooks her rice, just the same way anyone would go about cooking rice. I mean, we all know how to make rice right? While she’s waiting for the rice to cook she chops her vegetables, which in this case consist of a red pepper, a green pepper, some mushrooms an onion and a carrot. She heats up some coconut oil in a frying pan and cooks the mushrooms and the onions first. She throws in a bit more of her minced garlic and then adds the rest of her ingredients. She adds 1/4 cup of Tamari, a 1/4 cup of maple syrup, 2 tbsp of sesame seed oil, a fair amount of Sriracaha, and a bit of rice vinegar. She then adds in her rice and a little more sesame seed oil. She lets that cook for just a little while longer and then sits down to eat the last meal of the day.

  2. If you’re using un-waxed thin-skinned cucumbers such as the one you used,
    or the smaller Persian variety, you should keep the skins on. The skins
    contain a ton of vitamins and minerals, especially silica.
