Vegetarian Pizza

So I made this pizza from scratch with items I got from my local farmer’s market. Definitely a new favorite! What are some of your favorite pizza toppings?

Pizza Dough:
2 packets of active dry yeast
2 Tbsp sugar
1/4 cup of oil, plus more for bowl and brushing
2 tsp of coarse salt
4 cups of all purpose flour, plus more for work surface

Toppings:
Cheddar
Parmesan
Tomato sauce*
Roasted beets
Purple cauliflower
Sweet onion
Fresh oregano

Pour 1 1/2 cups warm water into a large bowl, add yeast and let stand until foamy, 5 min
Whisk sugar, oil, and salt into the yeast mixture
Add flour and stir until stick dough forms.
Transfer dough to oiled bowl and brush top with oil
cover bowl with plastic wrap and set aside in a warm place to double in size, about 1 hour
Gently knead 1 or 2 times on lightly floured surface before dividing and using.
To freeze, you can wrap the dough in plastic and freeze it in a resealable freezer bag for up to 3 months.

Tomato Sauce*
Sauteed Garlic, Sweet Onion, Canned Diced Tomato, pinch of salt and a little sugar
