Peach Upside-Down Cake, vegan, oil-free RECIPE

Peach Topping
1 large ripe peach, pitted, sliced
1/4 cup chopped walnuts
1 teaspoon brown sugar
1/8 teaspoon ground cinnamon
pinch of salt, not for taste but to help soften peaches

Cake Batter
2 tablespoons mixed Ener-G Replacer egg (= 1 egg substitute)
1 cup bread flour
1/4 cup rolled oats
3/4 cup plain, unsweetened soy milk
1 teaspoon vanilla extract
2 tablespoons fruit puree (applesauce or blended peach bits)
1 tablespoon granulated sugar
1 tablespoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon sea salt

Air Fry in Breville Smart Oven Air 5 minutes at 375ºF.

  1. I almost had a heart attack when the squirrel fell off! I guess I’m surprised – last time I was around, you said you weren’t going to get into air frying. Looks like you changed your mind. : )
