Vegan spring rolls & thai peanut sauce

Chop up veggies of choice. For example, shredded carrots, cucumbers, green onions, cilantro, red peppers, mangos, spinach, purple cabbage, baked tofu.
Chop up veggies, for the tofu, I used extra firm and put a cast iron skillet on top so the water can drain out for about 20 mins. The slice into strips & put in a ziplock bag and season with garlic powder, black pepper, & coconut aminos. Gently massage tofu in bag and let marinate for 30 mins. Then bake at 350 for about 20 mins. or until browned.
While the tofu is baking. Make peanut sauce.

I used a can of original pillsbury biscuits and used a rice vinegar top to cut a circle in middle. Then fry in a preheated skillet. on both sides. Make sure flame is set to medium. They cook quickly so let fry for about a minute or until golden brown. Let cool for 5 minutes then dip in glaze. Let cool on cooling rack completely.

Once tofu is done let cool, I put in fridge to cool faster. When ready take out rice paper and dip in water. ( I used a pan and added a little water in.) Then take out water and fill tour spring roll with veggies, roll and continue until veggies are gone.
