Perfect Party Fodder! It’s nibble time… These mini Mediterranean tarts were super tasty, plus they’re easy enough to make for a simple dinner, but impressive enough to serve at a dinner party if you wanted to! Our mates loved it.

Ingredients:

1 sheet of puff pastry
2 tbsp tomato puree
1 tbsp olive oil
1 tbsp balsamic vinegar
Pinch salt
1 tsp black pepper

Toppings:
Courgette
Cherry tomatoes
Kalamata olives
Capers
Sundried tomatoes
Red Onion

Soy milk for brushing

Method:

1 Lay the sheet of puff pastry onto a baking tray and cut into six squares. Then score a border onto the inside of the squares.
2 In a bowl, mix the tomato puree, oil, vinegar, salt and pepper to make a sauce. Then spread onto the inner of each square.
3 Put a few of each topping onto each of the squares.
4 Brush the puff pastry borders with soy milk
5 Cook for 15-20 minutes at 180℃ (356℉), or until they begin to look golden brown
6 Serve, they’re great hot or cold.
