Nankhatai are shortbread biscuits popular in India and Pakistan. The word Nankhatai is derived from Persian word Naan meaning bread and Khatai from an Afghan word meaning Biscuit.

This Nankhatai is completely vegan and just dissolve in mouth.

We used vegetable oil (Rice bran oil) instead of animal fat i.e. ghee. You can use oil of your choice like coconut oil, groundnut oil, seasme oil etc whatever you like but if you use oil which is odorless, cookies will be more delicious.

If you want to make nankhatai little harder use 1-2 tbsp of any plant based milk or just water.
