It adds a hint of umami/savory flavor that egg yolks usually add. But you could totally leave it out too 😀

Congrats on six years. I just made four last month. Everyday we live and learn, right. I was looking around too and apparently Wilton’s sprinkles are vegan. It’s funny cuz I just assumed they were not.
I’m actually really glad you asked this question, because I didn’t realize that not all sprinkle brands are vegan until I read your quest. Another one of those food items that you never really question because it seems like it wouldn’t contain any animal products. I’ve been vegan for almost 6 years now and I totally overlooked this! Jeez lol I did search online and found this brand on amazon, which I’ll be ordering soon myself: Thanks again for the question! 😀
