Here are my two easy taco recipes minus the shell! I love trying taco inspired foods in fun ways, while still eating healthy! These 2 taco inspired recipes are both healthy and easy to make.

TACO PIZZA

Serves 1

Ingredients
Vegan ground crumbles (I used Gardien)
Taco seasoning
Whole wheat tortillas
1/2 c black beans (smashed so they are easy to spread)
1/2 c chopped kale
1/4 c diced red onions
1/4 c diced tomatoes
1/4 c chopped bell pepper of your choice
1/4 c corn
1 green onion diced
Avocado or gauc
Salsa for topping

1. Pre heat oven to 400’F.
2. Add vegan ground to a pre heated skillet, cook for 1 minute stirring frequently. Add taco seasoning and water so ground doesn’t stick to your pan.
3. Place tortilla on a baking sheet. Assemble your pizza starting with black beans and work your way up.
4. Bake in oven for 20 minutes or until tortilla is slightly golden.

CHICK’N TACO SALAD

Serves 1-2

Ingredients
Morning Star Vegan Chick’n Strips
1 tsp sazon
2 tbsp taco seasoning
spring mix
1/4 c diced red onions
1/4 c diced tomatoes
1/4 c chopped bell pepper of your choice
1/4 c corn
Chopped cucumbers
1 green onion diced
Brown rice
Black beans

1.Add vegan strips to a pre heated skillet. Cook for 1 minutes stirring frequently. Add seasoning and water so it doesn’t stick to pan.
2. Assemble your salad with ingredients. Top with Avocado Cilantro Lime Dressing (recipe below)

ENJOY!

Avocado Cilantro Lime Dressing

1 Avocado
Juice of 1 lime
1/3 c of chopped fresh cilantro (add more if you’d like)
Plain Non Dairy yogurt
1 tsp minced garlic
Salt and pepper to taste
Non dairy milk (add as much or as little as you’d like depending on how thick you want your dressing)

1. Blend all ingredients in blender until creamy and smooth.
