Hi guys! Welcome back to my channel 🙂 In today’s video I’m sharing a yummy, easy recipe for raw carrot cake bites! They are made from whole food ingredients, don’t contain any refined sugar or flour, and are paleo, gluten free, & vegan! LASH SERUM I USE:
MY FAV BRONZER:

RECIPE:
Base:
1 cup shredded carrots
1 cup walnuts
1 cup pitted dates
1/2 cup unsweetened coconut flakes
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ground ginger
Icing:
1 1/2 cups soaked cashews (soak overnight)
1/3 cup coconut oil, melted
1/3 cup maple syrup
1 tsp cinnamon
Juice of 1/2 lemon

Directions:
1. Add all base ingredients to food processor. Process until stick dough forms
2. Spoon carrot cake dough and press into mini cupcake tin (or press into bottom of pan to make a cake/bars)
3. Place cupcake tin into freezer
4. Place all icing ingredients into food processor and process until smooth
5. Remove cupcake tin from freezer. Place generous amount of icing into each carrot cake bite, and then top with walnut pieces
6. Place carrot cake bites back into freezer for 15 minutes to allow icing to stiffen
7. Enjoy!!
(Make sure to store in freezer)
