EASY FLATBREAD PIZZA WITH ROMESCO SAUCE || vegan, dairy-free, gluten-free

How to make vegan flatbread with homemade romesco sauce and crispy oyster mushrooms!

When I’m in the mood for a quick dinner, this is one ‘pizza’ recipe that I’m in love with! It’s easy to prepare, very hearty and reminds me that a nutritious meal just needs to focus on a few flavorful ingredients. This can also be used as the perfect bite size appetizers for your next party 🙂

And the beauty of this delicious recipe is that it suits nearly every diet, including gluten-free, vegetarian, sugar-free and dairy-free. Enjoy this modern take on an Italian pizza!

Serves: 2
Prep Time: 10  minutes | Cook Time: 20 minutes

For the Romesco Sauce:
2 red bell peppers, broiled on high for 15-20 mins until skin has blistered (and then peel skin and discard the seeds and stem)
Juice of 1 small lemon
Big handful of hazelnuts, or any nut
1 teaspoon smoked paprika
Dash of chili flakes
Small handful cilantro
1 garlic
1-2 tablespoons of olive oil
Sea salt to taste

For the Flatbread:
1 pack of Guan’s Oyster Mushrooms, large pieces halved
1 tablespoon avocado or olive oil
1-2 flatbread pieces, serving 2 people (can use gluten-free option)
Handful of micro greens
Handful of hazelnuts, roughly chopped
Pinch of sea salt

Start by making the romesco by blending all the ingredients into a food processor or blender until smooth, yet slightly chunky. Set aside.

Preheat the oven to 400F degrees. In a bowl, toss together the mushrooms, oil, sea salt and mix well. Lay the mushrooms evenly over a lined baking sheet. Roast for 20 minutes until slightly browned. Flip half way. Set the cooked mushrooms aside while you prepare the flatbread.

Warm the flatbread in the oven for a few minutes. To assemble, layer a generous helping of the romesco sauce over the entire flatbread. Then add the roasted mushrooms, and top with the micro-greens and chopped hazelnuts. Enjoy!
