The following is a recipe for super easy breakfast cookies using PRESSED by KIND bars in the Apple Strawberry Cherry Chia Seed flavor.

They’re GLUTEN-FREE, a good source of fiber, and contain NO GENETICALLY ENGINEERED INGREDIENTS!

KIND Bars have always been a go-to for me for on-the-go health food. I take them on airplanes or keep one in my purse or car for after a workout. They’re made with real ingredients and definitely healthy.

I’ve been loving their PRESSED by KIND bars. These ones contain 2 FULL SERVINGS of fruit. I created a recipe for breakfast cookies that uses them!

Rather than adding in dried fruit and chia seeds to these oatmeal nut butter cookies, I chopped up the Apple Strawberry Chia Seed PRESSED Bars and combined them with the rest of the ingredients. It made for DELICIOUS breakfast cookies!

The warm and slightly melted PRESSED Bars tasted perfect with the nut butter and oats. Feel free to sub in almond butter or cashew butter and experiment with other PRESSED by KIND Bar flavors!

Ingredients
1/2 cup rolled oats
1/2 cup applesauce or mashed banana
1/4 cup peanut butter (or nut butter of choice)
1/2 tsp vanilla extract
1 pinch of salt
2 PRESSED by KIND Strawberry Apple Cherry Chia Bars
3 tsp baking stevia
Instructions
Preheat the oven to 350 degrees.
Cut up PRESSED by KIND Strawberry Apple Cherry Chia Bars into small pieces and set aside.
Mash the applesauce or banana with the nut butter until smooth.
Stir in all other ingredients until well-combined.
Add in PRESSED by KIND Bar pieces and stir well.
Shape into cookies.
Bake on a greased cookie sheet for around 15 minutes.
Let cool 10 minutes before removing from sheet.
