Chewy Oatmeal-Raisin Cookies:
½ cup canola or safflower oil
1/3 cup brown rice syrup
1/3 cup rice or soy milk
¾ cup light brown sugar
1 tsp vanilla extract
2 1/3 cups whole wheat pastry flour or all-purpose flour
¾ tsp baking soda
½ tsp baking powder
2 tsp ground cinnamon
½ tsp ground nutmeg
½ tsp allspice
½ tsp salt
2 cups rolled or instant oats
1 ½ cups Thompson raisins

  1. The brown rice syrup is what does it, that, and them being oatmeal raisin cookies.   It should be stated that baking is optional with these.
