carrot cake energy bites (vegan & gluten-free) Something Vegan

RECIPE
1 cup carrot, peeled and shredded
1/2 cup raisins
3/4 cup raw pecans, chopped
3/4 cup unsweetened shredded coconut
1/4 cup protein powder (I used Jarrow Optimal Plant Proteins)
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
A pinch of sea salt
To a food processor, add carrots, and raisins. Process until well combined, and starting to form a paste. Add pecans, and coconut. Process a little more-the mixture should still be chunky. Transfer the mixture to a bowl. Add protein powder, cinnamon, nutmeg, and salt. Stir until well combined. Form into 10 balls and set on a pan lined with parchment paper. Refrigerate for a bit to let the bites set (about 15 minutes), and then transfer to an air-tight container before storing in the fridge. Makes 10 bites. Each ball has about 130 calories, 2 1/2 grams of protein, and a lot of vitamin A.

    1. You could probably use either oat flour or rice flour–add it a bit at a time until the texture is right.
