hey guys! here’s one of my favorite recipes: BROWN RICE PEPPERONI PIZZA (Vegan 5 style). it’s super simple and very versatile so I hope you try it out!
RECIPE:
3 cups cooked brown rice
1 flax egg (1 tbsp ground flax + 3 tbsp water)
tempeh (for pepperoni)
veggies (I like onions, bell pepper, mushroom, black olives, spinach, and fresh tomatoes)
1/2 can tomato paste (+ some water to get to the consistency you like)
spices for sauce (basil, oregano, garlic powder, black pepper to taste for the sauce)
other toppings i like: nutritional yeast, fennel seeds (this makes it taste like sausage), and crushed red pepper
preheat oven to 450F. make the flax egg and mix it with the rice. press it onto a parchment paper lined pizza tray. (you can make it super thin or do a deep dish style, both are good!). bake the crust for 20 minutes. to make the pepperoni, cut a block of tempeh lengthwise and use a cookie-cutter or some other small circular mold to cut out “pepperonis.” mix the tomato paste with water until you get the consistency you like. add spices. chop veggies. when crust is done baking, add the sauce, then the veggies, “pepperonis,” and other seasonings you like. bake again for 20 more minutes. the longer you let it cool, especially over night, the easier it is to eat like pizza. otherwise, you’ll probably have to use a fork 🙂 enjoy!
