RECIPE
1 cup organic sugar
1/2 cup vegan margarine
3 Tbsp. almond milk (or other non-dairy milk)
1 tsp. vanilla extract
1 cup white rice flour
1 cup gluten-free oat flour
1/2 cup unsweetened cocoa powder
1 tsp. baking powder
1/2 tsp. salt
Black food coloring (optional)
Frosting:
2 cups organic powdered sugar
2 Tbsp. vegan margarine
1 Tbsp. almond milk (or other non-dairy milk)
1 tsp. vanilla extract
Preheat the oven to 350 degrees Fahrenheit. To a bowl, add sugar, margarine, almond milk, and vanilla. Stir well. Add rice flour, oat flour, cocoa powder, baking powder, and salt. Stir well. Add black food coloring, if using, and stir until evenly distributed. Roll the dough out between two pieces of parchment paper. Use a cat cookie cutter to cut the cookies out. Remove the excess dough, and carefully transfer the cookies to a cookie pan. Bake for ten minutes. Let the cookies cool on the pan for a few minutes, and then transfer to a cooling rack to cool completely. Repeat with the remaining dough until all the dough has been used. While the cookies are cooling, make the frosting. To a bowl, add powdered sugar, and margarine. Use an electric mixer to mix well. Add almond milk, and vanilla. Mix until smooth. Transfer the frosting to a plastic bag (or piping bag if you have one), snip off a corner, and pipe cat skeletons onto the completely cooled cookies. Let the frosting harden before storing/stacking the cookies. Store in an air-tight container. Makes 24 cookies.
