BAKE // THE MOST EPIC QUICK EASY ROSE PISTACHIO VEGAN COOKIES

INGREDIENTS:

– COCONUT OIL
-SELF-RAISING FLOUR (YOU CAN USE GLUTEN FREE FLOUR I.E SPELT)
-GOLDEN SYRUP
-SOFT BROWN SUGAR
-ROSE WATER
-PISTACHIOS

Add 100g self raising flour to a bowl with 50g coconut oil, then rub together till the mixture resembles breadcrumbs.

Add 50g light brown sugar, 1 tbsp golden syrup, 2 tbsp rosewater and 50g finely ground pistachios, and mix to combine.

Divide dough into 12 equal pieces, flatten slightly and arrange on a baking tray spaced apart to allow them to spread.

Bake for 12 mins till golden, cool a little then serve while still warm 🙂
