RECIPE
1/2 cup vegan margarine
1/2 cup organic sugar
1/2 cup organic brown sugar
1 tsp. vanilla extract
1 tsp. almond extract
2 1/4 cup all-purpose flour
1/2 tsp. salt
1/4 tsp. baking powder
Blue hard candy, smashed/broken up into pieces (don’t smash it into a powder)
Icing
1 cup organic powdered sugar
1 Tbsp. vegan margarine
1/2 Tbsp. non-dairy milk
1/2 tsp. vanilla extract
Preheat the oven to 375 degrees Fahrenheit. To a bowl, add vegan margarine, sugar, brown sugar, vanilla extract, and almond extract. Stir well. Add flour, salt, and baking powder. Stir until a smooth dough forms. Roll the dough out on a floured surface. Use a snowflake cookie cutter to cut out cookies. Use a small leaf/oval shaped cookie cutter to cut out part of the snowflakes. Place the cookies on a pan lined with a baking mat. Re-roll and cut until all the dough has been used. Fill in the holes in the cookies with the broken blue candies (do this neatly, and be sure not to leave any candy on top of the cookies, or on the mat, because they will melt and be messy). Bake 8-10 minutes. Let the cookies cool on the pan, and be sure not to touch the melted candy until it hardens, because it will be very hot! To make the icing: to a bowl, add powdered sugar, vegan margarine, non-dairy milk, and vanilla extract. Stir until smooth. Transfer to a plastic bag, or piping bag, and decorate the cooled cookies. Makes 16-24 cookies depending on size.
