Hello lovelies! One of my followers on Instagram asked if I could come up with some lunch ideas for work so I came up with this super yummy and quick vegetable ratatouille! It’s vegan and healthy as it’s packed with vegetables! It’s also super quick to make since it only takes 15 minutes including preparation time!

Ingredients
1/2 tbsp olive oil
1 small bay leaf
1/4 tsp dried basil (or other herbs)
1/4 tsp dried thyme (or other herbs)
1/4 tsp garlic powder
1/4 tsp onion powder
1/2 a 400g can of whole tomatoes
1/2 tbsp red wine
1/2 cup hot vegetable broth
1 cup mixed frozen vegetables (broccoli and cauliflower recommended)
1/2 a 400g can of white beans rinsed and drained
5 black pitted olives + 1/2 tbsp olive juice
1 tsp agave (or other sweetener)
Black pepper
Salt
