THE BEST DANG OATMEAL COOKIES YOU’VE EVER MADE!

Ingredients:
1/2 of a banana (mashed)
1/2 cup of coconut oil
1/3 cup of maple syrup
1/2 cup of sugar
1 tsp pure vanilla extract
1 cup of flour
1/2 tsp of baking powder
1/2 tsp of baking soda
1/4 tsp of salt
2 cups of quick oats
1/2 cup of chocolate chips (dairy-free)

The secret weapon in these guys?… BANANA!

Mashed banana mimics the binding qualities of an egg in these cookies to not only hold them together but to also add a flavourful PUNCH!

These cookies literally have people swooning and in utter shock once they discover that they’re vegan (because some people automatically assume vegan means gross?!) You crazies! I first made them while volunteering as a cook aboard the R/V Martin Sheen, and when our pals from the M/Y Farley Mowat would visit, they would always make sure they had some of these cookies in tow.
