Recipe:
Dry Ingredients:
120 grams (1 and 1/2 cups) old-fashioned whole rolled oats
94 grams (3/4 cup) wheat flour
1/2 teaspoon baking soda
1/2 teaspoon salt
170 grams (6 ounces or half a bag) semi-sweet vegan chocolate chips
Wet Ingredients:
114 grams (1/2 cup) vegan butter
150 grams (3/4 cup) brown sugar
1 egg replacer
2 teaspoons vanilla extract
Instructions:
Combine the dry ingredients except the chocolate chips in a bowl, and whisk until combined.
Add the chocolate chips, stir gently, and set aside.
Combine the butter and sugar, and beat until creamy and combined.
Add the egg replacer and vanilla and beat until combined.
Add the dry ingredients to the wet, and beat until just combined (don’t overbeat).
Form dough into 12 balls and freeze at least 30 minutes.
Bake at 350F for 11 minutes, or until edges and tops are just set (don’t overbake).
