Who’s not into greasy food? Well me too 🙋🏻 This cookies are not the typical oily cookies and very easy to make. It takes only 7 ingredients and basically only 4 steps. Dry ingredients, Wet ingredients, Combine, Bake. Can things get even better?
1 cup 1 tbsp AP flour
1 tsp cornstarch
a pinch of salt
1/2 tsp baking soda
1/4 cup + 1 heaping tbsp margarine / vegan butter
1/2 cup brown sugar
1/8 cup plant based milk (I’m using soy)
1/2 cup + more chocolate chunks or chips
Mix all dry ingredients in a bowl. Mix all wet ingredients and cream em in another bowl (look online to know what’s creaming).
Pour in dry mixture to the wet in two parts, mix well before second addition. The dough should be easy to handle and not very sticky.
Mix in chocolate chunks. Shape round the dough. Put on the tray making sure there is enough space for the dough to spread and rise. Top with more chocolate chunks on top.
Bake on preheated oven (180C) for 11-15 minutes depending on how thick the cookies are.
Note:
My dough turned into 8 large thick cookies. You can make more than 8 pieces by just rounding smaller cookie dough. Also remember to reduce the baking time. Check your oven once in a while.
To make it into cookie dough: Microwave your flour before using it for 30 second intervals. Stir the flour to make sure all bacteria are killed, then microwave for another 30 second. Follow the rest of the steps without baking the cookies obviously.
