Vegan Chocolate Birthday Cake

Beautifully moist, light and chocolatey! Good enough for any occasion…not just birthdays! It takes slightly longer to make if you’re not magical, but it will taste out of this world just the same!

We are two brothers living in beautiful New Zealand who enjoy cooking together. Our food is plant based and cruelty free. No animals were harmed in the making of our food, and the food is free from all animal products.

Ingredients:

3 cups Flour
2 cups Brown Sugar
1 cup Cocoa Powder
2 tsp. Baking Soda
1 tsp. Salt
1 cup Vegetable Oil
2 tbsp. Vinegar
2 tsp. Vanilla Extract
2 cups Water

Method:

Preheat oven to 180°C.

Grease and line two eight inch round baking tins with baking paper. Mix all the dry ingredients throughly until there are no lumps. Mix all the wet ingredients until smooth and thoroughly incorporated. Combine the wet and dry ingredients, then add it to the baking tins.

Bake for forty-five minutes or until a knife comes out clean. Leave the cakes to cool for at least ten minutes. Loosen the sides and tip it out onto a wire cooling tray. Let them cool completely. Make chocolate buttercream icing. Fill and ice the cake.

NOTE: The cake tastes much better the next day.
