Vegan Chai Cake

Chai cake tastes very similar to a spice cake and is a wonderful treat to have with a tea or coffee. This cake is light, fluffy and vegan!
In experimenting with vegan cakes, I have found that the combination of baking soda and vinegar is the secret in creating a fluffiness that an egg would provide. It sounds terrible but magic happens in the oven when these two ingredients are combined. Just don’t expect the raw cake batter to taste good. It doesn’t. it tastes like effervescent vinegar. Don’t worry though, the gassy taste mellows out when baked and you are left with something (hopefully) delicious 🙂

Dry ingredients

2 cups flour
1/2 cup brown sugar
2 tablespoons masala chai powder (mixture of cinnamon, cardamom, ginger, etc…)
1 teaspoon baking powder
1 teaspoon baking soda
pinch of salt

Wet Ingredients

1 cup water
1/2 cup vegetable oil
1/4 cup apple sauce
1 teaspoon vanilla extract
1 teaspoon vinegar (to activate the baking soda and make your cake fluffy)

* I greased my cake pan with vegetable ghee which tastes like coconut oil popcorn.

Chai icing

1 cup vegan icing sugar
approx 2 tablespoons water
masala chai powder to taste

Mix everything together until thick. You may need to adjust by adding more icing sugar, or water. You want it to be a thick paste like oil paint.
