root beer float cookies Something Vegan

RECIPE
3/4 cup organic brown sugar
1/4 cup non-dairy milk
1/4 cup canola oil (or other neutral oil)
1 tsp. vanilla extract
1 tsp. root beer flavoring
2 1/2 cups all-purpose flour
1/2 tsp. baking powder
1/2 tsp. salt
Frosting:
1 1/4 cup organic powdered sugar
1 Tbsp. vegan margarine
1 tsp. non-dairy milk
1/2 tsp. vanilla extract
3 red and white striped paper straws, cut into sixths—to make 18 mini straws for decoration

Preheat the oven to 350 degrees Fahrenheit. To a bowl, add brown sugar, non-dairy milk, oil, vanilla extract, and root beer flavoring. Stir well. Add flour, baking powder, and salt. Stir until smooth. Roll into balls, set on a baking pan, and use your thumb to press holes into the middles. Bake 10-12 minutes. (You might need to re-press the holes in the cookies if the middles have risen too much.) Let cool a few minutes on the pan, and then move to a cooling rack to cool completely. To make the frosting: to a bowl, add powdered sugar, vegan margarine, non-dairy milk, and vanilla extract. Stir until smooth. Pipe the frosting into the middles of the cooled cookies, and top with the little straws. Makes 18 cookies.
