Vegan Pandan Sponge Cake
(makes two 8-inch rounds)
– 2 cups soy milk
– 2 tsp cider vinegar
– 2 1/2 cups flour
– 1/3 cup cornstarch
– 2 tsp baking powder
– 1 tsp baking soda
– pinch of salt
– 3/4 cup sugar or sugar substitute
– 2/3 cup oil
– 2 tablespoons pandan juice (puree 10 pandan leaves with 4 tablespoons water, strain out juice)
– 1 tablespoon pandan extract

the cake looks great! I can’t seem to find pandan leaves where I live, so I now can only hope to try it out one day ☺
Oh my gosh, you definitely have to try it (kind of milky, sweet and grassy). It was such a different flavor for me. Maybe if you have an Asian grocery store, a lot of the times they will put the leaves in the freezer aisle 🙂
Another great video! This cake looks lovely, but I’ve never heard of pandan before (at first I thought it said panda, lol) and I don’t think that it’s available where I live. What does it taste like?
Thank you!! So I just wrote a full post on the recipe that includes the flavor of pandan . Basically, it sort of tastes lightly sweet, lightly milk-y, and ever so slightly grassy. It was definitely a new flavor for me and now I put it in everything. I’d say if you end up ordering the extract online, that essence gives the general flavor, but fresh leaves add a whole other dimension. In terms of finding pandan leaves, if you happen to have an Asian grocery store nearby, try the freezer section. They sometimes will put the more tropical stuff – banana leaves, lemongrass and pandan leaves in the freezer section!
