In this special episode of The Edgy Veg Candice teams up with McCain Foods to bring you the perfect recipe for your FryDay Date night, Pad Thai fries.

McCain fries are special on many different levels which is why Candice chose them for this recipe, but the most important factor to take note of is that they are made exclusively from Canadian potatoes. Also, they are completely delicious. In order to make your FryDay Date Night a major success you’re going to need some high quality fries and that’s all there is to it. Be honest with yourself, you know you want some fries anyway, why not share them with someone you love?

To make these outstanding Pad Thai Fries you will start by baking your fries. Simply lay out your frozen fries evenly on a large baking sheet. Laying them out evenly is crucial to getting properly baked fries that have a bit of crisp to them. Follow the instructions on the McCain Superfries package regarding cooking temperatures and then put those fries in the oven. You will want to cook those for about 20 minutes.

While your fries are cooking wash all of your ingredients completely. Candice makes it very clear in this video that washing your ingredients is exceedingly important so don’t even think about skipping this step. Take a metal colander or other bowl designed for washing ingredients, put it in the sink and carefully spray down each one. We will be using sprouts, green onions, cilantro, and a lime cut into four equal quarters to create these Pad Thai Fries. Chop your green onion and cilantro first and set it aside.

Many of you may not know this but Candice’s boyfriend James actually used to live in Thailand. He notes that while Pad Thai Fries are definitely not traditional Thai food he did find that they have a similar flavor to much of the street food he ate while living there.

The next step here is to create your Sriracha Mayo. Sriracha Mayo? Yes, really. Sriracha Mayo is the absolute perfect compliment to this dish. Simply find yourself a squeeze bottle and put a fair amount of mayo in it, add to this a fair, but not equal, amount of Sriracha and then squeeze in some lime. Shake this up well until it turns just a bit dark, it will be most likely turn a shade of pink. The squeeze bottle is important to have on hand as it is what will allow you to drizzle your Sriracha Mayo on your Pad Thia Fries.

When your fries are a nice crispy consistency pull them out of the oven and plate them. Top them with bean sprouts first, this is going to be a great compliment to the crunchiness of the fries as the sprouts are light and crisp. Next you will sprinkle on your chopped cilantro, drizzle the fries with your Sriracha Mayo, and finally throw those green onions on there.

    my hubs and four kids eat meat and lots of it! So it’s nice to see that a
