RECIPE
3/4 cup organic sugar
1/2 cup vegan margarine
2 Tbsp. fresh orange juice
1 tsp. orange extract
1 tsp. vanilla extract
1 1/4 cup white rice flour
1 cup gluten-free oat flour
1 Tbsp. orange zest
1 tsp. baking powder
1/2 tsp. salt
Frosting:
1 1/2 cup organic powdered sugar
1 Tbsp. vegan margarine
1 Tbsp. almond milk
1/2 tsp. vanilla extract
Orange food coloring

Preheat the oven to 350 degrees Fahrenheit. To a bowl, add sugar, and vegan margarine. Cream together. Add orange juice, orange extract, and vanilla extract. Stir well. Add rice flour, oat flour, orange zest, baking powder, and salt. Stir well. Roll dough out between two pieces of parchment paper. Cut into circles (I used a 3 1/2-inch cookie cutter) and then cut the circles in half. Transfer the half-circles to a greased baking pan. Repeat until all the dough has been used. Bake 12-15 minutes. Transfer to a cooling rack to cool completely. To make the frosting: to a bowl, add powdered sugar, margarine, almond milk, and vanilla. Stir until a smooth frosting forms. Transfer about 1/4 cup of the frosting to a re-sealable bag. Add orange food coloring to the remaining frosting and stir in. Frost each cookie with the orange frosting. Pipe a small white line around the edge of each cookie, and then drag a toothpick from the outside of the frosting to the center to create the look of orange slice segments. Makes 18-24 cookies (depending on size).
