RECIPE
2 cups all-purpose flour (or 3 cups gluten-free oat flour to make it gluten-free)
1 cup organic sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup orange juice
1/2 cup canola oil (or other neutral oil)
1/4 cup non-dairy milk
Zest of one orange (reserve a little for topping)
1 tsp. vanilla extract
1 tsp. orange extract
Glaze:
1/2 cup organic powdered sugar
1 Tbsp. orange juice

Preheat the oven to 350 degrees Fahrenheit. To a bowl, add flour, sugar, baking powder, baking soda, and salt. Stir well. Add orange juice, oil, non-dairy milk, most of the orange zest, vanilla extract, and orange extract. Stir until well combined. Pour into a greased loaf pan, and spread smooth. Bake 55-65 minutes. Let cool for a while in the pan, and then remove, and place on a cooling rack to cool completely. To make the glaze, to a bowl add powdered sugar, and orange juice. Stir until smooth. Once the loaf is cool, spread the glaze on top, and sprinkle with orange zest. Makes one loaf.
