RECIPE
1 cup natural creamy peanut butter
1 cup organic brown sugar
1/4 cup neutral baking oil
1 tsp. vanilla extract
1 1/4 cup all-purpose flour (or use 1 3/4 cup gluten-free oat flour to make these gluten-free)
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/4 cup pretzels, broken into small pieces (use gluten-free pretzels if making gf cookies)
1/4 cup Unreal dark chocolate peanut gems (or other vegan candy-coated, chocolate-covered peanuts)
1/4 cup vegan chocolate chips

Preheat the oven to 350 degrees Fahrenheit. To a bowl, add peanut butter, brown sugar, oil, and vanilla. Stir well. Add flour, baking powder, baking soda, and salt. Stir until smooth. Add pretzels, chocolate peanut gems, and vegan chocolate chips. Stir until evenly mixed. Scoop, and press dough onto an ungreased baking pan. Bake 10-12 minutes. Let cool for a bit on the pan, and then transfer to a cooling rack to cool completely. Makes 18-24 cookies, depending on size.
