lemon blueberry loaf Something Vegan

RECIPE
2 cups all-purpose flour (or 3 cups gf oat flour to make it gluten-free)
1 cup organic sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
3/4 cup non-dairy milk
1/2 cup canola oil (or other neutral oil)
3 Tbsp. lemon juice
1 Tbsp. lemon zest (plus a little more for sprinkling on top)
2 tsp. lemon extract
1 tsp. vanilla extract
1 cup fresh or frozen blueberries
Glaze:
1/2 cup organic powdered sugar
1 Tbsp. lemon juice

Preheat the oven to 350 degrees Fahrenheit. To a bowl, add flour, sugar, baking powder, baking soda, and salt. Stir well. Add non-dairy milk, oil, lemon juice, lemon zest, lemon extract, and vanilla extract. Stir well. Add blueberries, and fold in—just a couple turns, don’t overmix. Pour the batter into a greased loaf pan. Bake 55-60 minutes. Let cool completely. To make the glaze: whisk powdered sugar and lemon juice together until smooth. Spread over the cooled loaf, and top with lemon zest. Makes one loaf.

  1. It’s in the oven! I used half flour and half oats. Then I had no sugar so I used half brown sugar and half date sugar. I used a can of coconut milk in place of the oil and some of the milk. And finally a few drops of lemon essential oil instead of extract. The batter tasted so yummy! I have a friend coming over tonight so this will be a perfect treat!

    1. @somethingvegan it did and it’s delicious. I keep shaving off pieces to “test”. I hope lasts long enough for my guests to try lol thanks for the inspiration!
