How To Make Oatmeal Raisin Cookie Bites | VEGAN GLUTEN & DAIRY FREE

Chewy oatmeal raisin cookie energy bites perfect for a pre or post workout snack or grab and go breakfast! This healthy snack recipe is both gluten free and vegan so everyone can enjoy it 🙂

INGREDIENTSa
1/2 cup gluten free rolled oats
1/2 cup raw whole walnuts
1/3 cup unsweetened shredded coconut
1/2 cup creamy natural almond butter
1/3 cup maple syrup
1/2 cup Thompson raisins
3/4 tsp cinnamon
pinch of sea salt

DIRECTIONS
In a food processor add in oats, walnuts, sea salt and cinnamon and pulse for 15-30 sec.
Add in shredded coconut and pulse for 5 sec to blend everything together.
In a large mixing bowl add in the oat mixture and mix in almond butter and maple syrup. Mix everything well together with a spatula or your hands!
Toss in raisins and mix everything up until well combined.
Using a 1 1/2 tbsp ice cream scoop, scoop out the dough and form into balls.
Place energy bites onto a cookie sheet lined with parchment paper and refrigerate for 15-30 min to harden.
You can enjoy them straight away or store them in an air tight container either on the counter for 3-5 days or in the fridge/freezer for 3-4 weeks.
