How to make yummy raspberry muffins that are vegan, gluten and refined-sugar free. They turn out fluffy and moist without any eggs and are much healthier than regular muffins! You can also replace the raspberries with other berries you like. Hope you enjoy this video!

By the way if you want a denser, slightly higher muffin, try using 1/4 cup of almond milk instead of 1/2 cup. These ones in my video are lighter and fluffier on the inside but aren’t that high.

Ingredients
Chia egg (1 tbsp chia seeds + 3 tbsp water)
1/2 cup cornmeal
1/2 cup almond meal
1/4 cup rice flour (regular, not glutinous)
2 tsp baking powder
Pinch of cinnamon powder
Pinch of salt
1 tsp vanilla essence
1/2 cup unsweetened almond milk (or other vegan milk)
1/4 cup agave (or other sweetener)
2 tbsp coconut oil melted
1/2 cup frozen raspberries (or fresh or other berries)
