I’m so excited to share with you my recipe for how to make amazing and fluffy pancakes that are vegan, gluten-free, eggless, soy-free and also free of refined sugar! Gosh that was a mouthful but I really love these pancakes! They are so versatile and you can top them with anything you like! I hope you love them too! Update: I have also made these pancakes with a chia “egg” instead of the egg replacer. To make it just mix 1 tbsp of chia seeds with 3 tbsp of water and set it aside for a view minutes to thicken up.

Ingredients
1/4 cup buckwheat
1/4 cup cornmeal (not cornstarch)
1/4 cup rice flour (regular, not glutinous)
Pinch of salt
Pinch of cinnamon
1 1/2 tsp baking powder
1/2 cup oat milk (or other vegan milk)
1 tsp vanilla essence
1 1/2 tbsp agave
Orgran egg replacer equivalent to 1 egg (or a chia “egg”)
1 tbsp margarine melted (or coconut oil)
Some margarine (or coconut oil) for the pan

      when I make them I use 1 chia egg instead of the egg replacer. xx
