Healthy Chocolate Chip Oatmeal Cookies (Vegan!)

Who is ready to eat a warm chocolate chip cookie? Oh wait, did someone just say that chocolate chip cookies aren’t healthy? Do you want one anyway? You’ve come to the right place! Not only are these chocolate chip, banana, oatmeal cookies, delicious, they’re healthy too! They are so healthy that you can eat them for breakfast (without questioning your choices😉)! Win-win!!

Recipe-
*2 medium (RIPE) bananas – yellow with brown spots are best for sweetness and digestion
*1 1/2 cups rolled oats
*1/4 teaspoon baking powder
*1/4 teaspoon cinnamon
*2 Tablespoons mini vegan chocolate chips – optional (but you know you want to!!)

Bake in an oven at 350F for 22 minutes

OPTIONAL Extras –
*Unsweetened Coconut Flakes
*Diced Apple
*Chopped Walnuts
*Unsalted Natural Peanut Butter(if you do add PB – be sure to add some extra oats to balance out the liquid from the PB)

(NOTE) – because these cookies are made with oats, they will dry out fairly quickly if not covered or put in an airtight container. I like storing mine in a mason jar for a quick on-the-go snack or breakfast!
These cookies come out of the oven warm, soft, and TASTY! Enjoy them warm, cold, or reheat if needed! (I LOVE eating them for breakfast along with chocolate banana ice cream!)
