Gluten Free Vegan Ginger Molasses Cookies

The smell of ginger bread cookies baking is irresistible. The smell wafts all through the house. Hard to resist not grabbing and popping hot cookies in your mouth!

These gluten free, vegan and diabetic friendly ginger cookies are easy to make. See recipe below!

Chewy Vegan GF Gingerbread Cookies
Makes 24 to 30 Cookies
Preheat oven to 350 degrees

Combine 1 tbs. ground flax seeds with 3 tbs. water. Set aside
Dry Ingredients:
2 cups almond flour
½ cup gluten free all purpose flour
2 tsp of baking soda
¼ tsp salt
1 tbs. ginger powder
(add another teaspoon of dried ginger if you don’t have fresh ginger)
½ tsp nutmeg
1 tsp ground cinnamon
¼ ground cloves
Wet Ingredients
Mix together:
½ cup softened coconut oil (not totally liquid)
½ cup sugar or sweetener of choice (Pyure)
¼ cup molasses
1 tsp. vanilla
Add flax seed mixture (substitute for eggs)
Directions:
If you want extra chewy cookies, add 1 tablespoon of freshly grated ginger into wet mixture. Combine dry ingredients into wet mixture in mixing bowl. Dough will be stiff.
Use small scooper or make into round balls and place on parchment paper
Only Bake for 10 minutes. Let cool.
Dust with powdered sugar. (optional)
