Vegan sticky toffee pudding, gluten-free apple crumble and Vegan Bailey’s chocolate mousse pots! Which one should I have for my Vegan Christmas Pudding this year?

Vegan Sticky Toffee Pudding

200g pitted cup dates
1 1/2 cups of Almond Milk (or your favourite Plant-based milk)
1 teaspoon baking soda
1 tablespoon apple cider vinegar
1/2 cup maple syrup
1 teaspoon vanilla extract
115g vegan margarine
200g white self-raising flour
1/2 teaspoon ground allspice
1/2 teaspoon ground ginger
1 teaspoon ground cinnamon
Pinch of salt

Toffee Sauce
200g soft brown sugar
150g vegan margarine
100ml soya cream
1 teaspoon vanilla essence

  1. Pro tip: I always add some whole oats to my crumbles- not only are they good for you but they give it extra crumbley crunch. My mum has always done it and I never realised it wasnt “the done thing” until recently
