Many of you saw my video titled “Why I Bake in My Rice Cooker” where I made a banana bread. There’s been requests for more “vegan” cake in the rice cooker recipes. This is my updated recipe for vegan banana bread. And, if you are not vegan, you can still make this delicious bread using your regular ingredients. Enjoy and happy baking in your rice cooker!

EASY RICE COOKER CAKE RECIPES: Vegan Banana Bread with Cranberries Raisins and Walnuts

INGREDIENTS:
• 3 medium or 4 small BANANAS (about 1 cup or more)
• 1/2 cup or 60 grams CHOPPED DRIED CRANBERRIES (any dried fruits or dates)
• 1/2 cup or 60 grams CHOPPED RAISINS (any dried fruits or dates you like)
• 1/3 cup or 75 grams ORGANIC BROWN SUGAR (regular brown sugar)
• 1/3 cup or 80 ml COLD PRESSED VIRGIN COCONUT OIL (any baking oil)
• 2 tsp or 8 grams PURE VANILLA EXTRACT (any vanilla extract)
• 2 tsp or 6 grams ORGANIC GROUND CINNAMON (any ground cinnamon)
• 1 tsp or 8 grams FINE SEA SALT (any fine salt)
• 1 tsp or 7 grams BAKING SODA
• 2 cups or 280 grams UNBLEACHED ALL PURPOSE FLOUR or WHITE SPELT FLOUR (any white flour)
• 1 cup or 125 grams CHOPPED WALNUTS (any nuts you like)

TOPPING:
• 1 tbsp or 15 grams ORGANIC BROWN SUGAR

HOW TO:
1. In a large mixing bowl, mashed bananas with a fork
2. Add chopped cranberries, raisins, brown sugar, coconut oil, vanilla and cinnamon and mix to incorporate it
3. Add salt, baking soda, flour and mix until blend, do not over mix
4. Fold in chopped walnuts and mix; batter is about the consistency of cookie dough
5. Add batter to rice cooker and spread it evenly
6. Top it with the 1 tablespoon of brown sugar
7. Bake in the rice cooker for 3 baking cycles (about 1 and 1/2 hour), then bake a 4th cycle with the lid open, to take away some moisture
8. Cool for 30 minutes or so and enjoy!

BONUS:
If baking in oven, bake at 350 degree F or 175 degree C, for 50-60 minutes, or until toothpick comes out clean.

  1. For those of you asking for more vegan recipe, here’s an updated recipe to my first banana bread, but this one is “vegan”! There’s no egg and use whatever vegan ingredients you have. For those who are not vegetarian or vegan? You will LOVE it as well. Plus you can just use the normal baking ingredients you have on hand. Enjoy everyone!
