Hey friends! In this video, you will learn how to make my favorite vegan cake recipe in the world: banana bread with chocolate chunks.
It’s super easy, there aren’t any weird special ingredients, it’s wholesome and healthy and nutritious, and most importantly: scrumptiously vegan! I’ve made it about 15 times already and it is seriously divine. My entire family loves it and everyone keeps asking for the recipe! It is even better than it looks. RECIPE INGREDIENTS
1/4 cup coconut oil
3 large bananas or 4 small bananas
1 tsp vanilla extract
1 cup coconut sugar
2 cups organic wheat flour
1 tsp baking soda
1 tsp salt
3/4 cup chocolate chips

*METHOD*
Mix wet ingredients first with coconut sugar. Mix dry ingredients. Add dry ingredients to wet ingredients. Pour into greased cake pan and bake at 360 degrees Fahrenheit for 35-40 minutes or until toothpick comes out clean.

ENTIRE RECIPE WRITTEN OUT
1. Start by pre-heating your oven at 360 Degrees Fahrenheit and lightly grease your cake pan with coconut oil.2. Then, melt one fourth of a cup of coconut oil on low/medium heat. I like to melt it with this double-boiler method.
2. Whip out 3 large brown-spotted, ultra ripe bananas and start mashing the crap out of them. Mash them until there are hardly any lumps. I usually get Gab to do this step 😀 If your bananas are very small like mine, use 4 bananas like I did.
3. Next, pour in all your melted coconut oil and give that a stir.
4. Add 1 cup of coconut sugar and mix that together.
5. Finally, add 1 tsp of vanilla extract and stir it all up!
6. Now, for the dry ingredients. You will need 2 cups of organic wheat flour. Don’t be scared from gluten if you aren’t celiac or gluten intolerant. Just get organic and you won’t have any inflammation issues, you’ll see!
7. To your flour, add 1 tsp of baking soda and 1 tsp of salt. Stir it together.
8. Add your dry ingredients to your wet ingredients and fold it together. You’ll notice it is a very thick mixture and it will be hard to mix together. Totally normal! Just keep stirring and folding, and you’ll end up with a muffin-batter-like batter.
9. The final magical ingredient is this: dark chocolate chunks. These are so yummy, I never use any other chocolate chips! They are 100% natural and vegan. You can go ahead and stir until combined.
10. Bake at 360 for 35 to 40 minutes, usually it take me 37 minutes but you can slide in a toothpick or thin knife and if no batter comes out, then it is ready!
11. Now this is the HARDEST part: wait at least 20 minutes for it to cool inside the pan and then flip it upside down to get the banana bread out. Let it cool 30 minutes before serving. It is 100 times better if you let it refrigerate overnight because then the chocolate chunks are kind of hard and the banana bread will have achieved the perfect texture and flavour. It takes patience but if you can wait until it is refrigerated at least 4 hours, you will be in heaven!
