RECIPE
2 cups vegetable broth
2 Tbsp. white vinegar
2 Tbsp. gluten-free soy sauce
1 Tbsp. pure maple syrup
1 Tbsp. liquid smoke
1/2 tsp. garlic powder
1/2 tsp. ground paprika
24 thick baby carrots
1/2 cup gluten-free oat flour
1/2 cup rice flour
1 Tbsp. tapioca starch
1/4 tsp. salt
1/4 cup vegan margarine
4 Tbsp. cold water
Topping:
Maple syrup
Fine sea salt

To a pot, add vegetable broth, vinegar, gluten-free soy sauce, maple syrup, liquid smoke, garlic powder, and paprika. Stir well. Add baby carrots. Bring to a boil, and let cook 10 minutes (or until just barely fork-tender). Remove from the heat and let sit for another 15-20 minutes, before draining and cooling, on a plate lined with a paper towel. Preheat the oven to 425 degrees Fahrenheit. To a bowl, add oat flour, rice flour, tapioca starch, and salt. Stir well. Add vegan margarine, and water. Stir until dough comes together. Roll out, between two pieces of parchment paper, into a long rectangle. Use a pizza cutter to cut the rectangle into 24 triangles. Carefully roll the cooled carrots up in the dough triangles, and set on a greased baking pan. Rub a little maple syrup on the top of each carrot in a blanket, and sprinkle with sea salt. Bake about 20 minutes. Serve with ketchup or mustard. Makes 24 carrots in a blanket.

    1. Ok, yeah, there are fewer options — but there are also still a lot of vegan foods that are naturally gluten-free. Rice, beans, oats, all fruits and vegetables, etc.

    2. somethingvegan I mean there is no fucking sense to be vegan if you are allergic to gluten…. There is less variety

    3. Sorry, I’m confused about what you are saying. One can be vegan AND gluten-free, or just vegan, or just gluten-free.

    4. somethingvegan I repeat why the fuck you should be vegan if you are allergic to gluten. That’s the only reason to not eat wheat

    5. Anyone can be vegan. You could easily modify this recipe to include wheat if you prefer though– or buy pre-made crescent roll dough (I’ve heard some of them are vegan).
