Dhokar Dalna or Bengal Gram Cakes Curry is a very popular Bengali vegetarian dish. It is usually cooked on special occasions. This is my simplified version and it turns out perfect everytime.

Before the advent of mixers and food processors, making the dhoka was a long drawn process. The lentil would be ground by hand on stone grinders or mortar and pestle.

Each family has their own special recipe for dhoka curry. My recipe is a combination of my mom’s and grand mom’s recipes with my own inputs. I love making this curry. It really is simple. Everyone who has it for the first time keeps guessing what the cakes are made of.

This is a tried and tested recipe from my kitchen and I hope you will adopt it too.

Bengal Gram Cakes Curry Makes about 18 to 20 pieces
(Dhokar Dalna)

Ingredients
Bengal gram (chana dal) – 1 cup
Asafetida (hing) – 1¼ tsp
Ginger paste – 1 ½ tsp
Green chilli – 2 to 3
Turmeric pdr – 1 tsp
Cumin pdr – 1 tsp
Coriander pdr – 1 ½ tsp
Red chilli pdr – ½ tsp
Tomato paste – 3 tblsp
Cumin seeds (jeera) – ½ tsp
Bay leaves / Tej patta – 2
Garam Masala pdr – ½ tsp
Vegetable/ Mustard oil – 3 tblsp + for deep frying
Sugar – 1 ½ tsp
Salt – to taste
